How to create a CSR for a production site.

Hi,

Have a newbie question so please bear with me.
I am currently running a production site using a SSL cert that is about to expire. At the same time I have to change the name of the organization from country A to country B. My question is how do I generate a CSR on a live production server so that I can create a new SSL with the new organization name(and country). Can I create the CSR on a dummy IIS server with the new organizations details and then send it to Comodo to create the new SSL cert?
