1 - After a while there will be too many shanshots, does CTM automaticaly deletes old ones or one day my hard drive would be full because of snapshots?
2 - Is it possible to exclude MyDocuments folder from restoring process? How?

it depends on how frequently snapshots are taken, their size and your settings. CTM settings are customizable enough to choose from.
It can be done two ways - you can set the folder name in CTM settings and it will restore the latter data after rollback. Or, after rollback, you can attach your latter snapshot as a HD and restore the data manually.
But please be warned - the program is buggy at the stage and can make severe damage to your data. I suggest you make a RAW (including MBR) backup before trying.
