I think this is a very common phenomenon, I experience the same issue… But I think it is easy to clarify: I think the graph is need to be seen as an indication and not as a real-time connection watch utility… If you want to see real-time connections you can use netstat…

Try to open a command-box and issue a command:
netstat -an
Look for ESTABLISHED and then close the application, see what happens.
