Defrag Utility Running Much Slower

OK - I understand that the AV runs automatically - every time a file is accessed.
I went to defrag my drive last night and noticed the program taking a lot longer than usual to complete. 
Is there a way to eliminate this behavior?  I tried adding the defrag program to the excluded list in AV but that didn't work (I didn't expect it to but I thought I'd try it!).
